Squashes & Pumpkins

Squashes, pumpkins and marrow have long trailing stems and belong to the genus of plants known as Cucurbita. Immature fruits of squashes with soft skins are described as summer squashes while winter squashes are mature with a hard skin.

Many of the vegetables in this group contain beta carotene, which give them their orangey colour, and they also provide us with antioxidant vitamins C and E.
