This group contains a wide variety of vegetables, from salad roots like radishes and beetroots, the so-called composite root crops like turnips, swedes, and salsify, umbelliferous root vegetables such as carrots as well as common starchy root crops like potatoes, yams, cassavas, and arrowroot.

Look for firm, unblemished root vegetables that are not sprouting. Make sure that the leaves of any root vegetables are fresh and green and not wilting. Most root vegetables keep well once they have been trimmed and placed in the refrigerator.
